If you are willing to grab a rideshare, Pecan Lodge in Deep Ellum does legendary barbecue, though they close earlier. For true late-night, the taco trucks along Maple Avenue serve some of the best al pastor in the city until well past 3 AM. Ask any local — they all have a favorite truck.
